Starting her professional wrestling career as a part of the Nitro Girls in WCW, she would quickly move on to bigger and better things within the company. Former WWE Women's star, Stacy Keibler would make her sole appearance on Psych as the character named Jessica Martino, an adrenaline junkie who likes to take part in extreme sports, together with her friends Ruby, Stuart, and her ex-boyfriend, Derek Walker. When Shawn, one of Psych's two lead characters, comes down to Ruby, who happens to be the new girlfriend of Gus, the other lead, Keibler's character feels an instant attraction to Shawn, which she simply just doesn't try to hide. Throughout the episode, Jessica attempts to flirt with Shawn, though he constantly pushes it aside, allowing for Stacy to show off some of her comedic ability while playing up her sex appeal and flirtatious nature.

Later in the episode, however, things take a turn after Stuart disappears, with Keibler's character becoming the lead suspect of a potential murder in regard to Stu's former business partner. While there are some suspect issues raised towards her, including her owning a gun of the same brand that was used in the crime, Keibler's Jessica is revealed to be innocent by the end of the episode. All in all, it was a bit of a different look for Stacy compared to her time in WCW and WWE.

While Keibler would star in an episode of Psych, that would not be her only acting role, as in February 2007, Keibler began a recurring role in ABC's What About Brian. Stacy played the role of Brian's new neighbor and love interest, with it also being Keibler's first major acting role, following previous minor roles in two movies, Bubble Boy and Pecker. Keibler would also guest star on George Lopez during the Fall of 2007, ending a big year for the former wrestling star.

In the Fall of 2008, Stacy Keibler appeared on ABC Family's miniseries, Samurai Girl, as the bag girl character, ironically named Karen. Two years later, Keibler appeared as "the hot bartender", a new conquest for Barney, in the How I Met Your Mother's 100th episode, titled "Girls Versus Suits". This small role would be one of Keibler's most notable ones during her acting career as well.

In a bit of a surprise, Keibler would make a guest appearance in the spy comedy television series, "Chuck", where she would co-star alongside fellow WWE alum "Stone Cold" Steve Austin. In that small role, Stacy Keibler played the role of CIA agent, Greta. In the years since, Stacy has slowed down her acting career and has even appeared a few times back in WWE, including inducting Torrie Wilson into the WWE Hall of Fame in 2019.
